Wife had a craving tonight so we decided to make blacl squid risotto. Came out really nice, silky smooth in the mouth, with that specific sweetness of squid ink thingy. It should be short grain rice, but all we had on hand was basmatti, so still bit sticky, but not as creamy. Really yummy <3

Not a fan of squid/octopus - have tried them a few times but just not something I like. Risotto though - hard to get right for a simple dish but it is really satisfying and tasty. Definitely an unusually appearance being completely black.

Looks an awful lot better than some of the restaurant servings you get when they do a streak of something brown that just looks like a 🐕has scooted across the plate.

yeah, its hard to get a good one in a restaurant we know few places on the coast where we frequent that make a good one so we go there. Yeah its an aquired taste, people seem to love it or hate it. Homemade one come out so much better than even the good ones in restaurant, i think because at home we always use fresh ink and put lots of it.. well except one REALLY good one on island of Krk. That cheff can have ALL my money for that risotto). I got poisoned once with white callamari risotto and never touched it again, the smell alone brings me back to that event 🤷‍♀️

I do mushroom and asparagus risottos using home made vegetable stock. Great inexpensive meals - about £2 for both of us compared to a restaurant price.

Prunes and pesto are the only things I really hate and will not touch. Pesto just makes me sick for some reason - must be something in it that doesn't agree. Prunes, even the sight/smell can make me instantly throw up! Not bad considering I was force fed them at school dinner time over 50 years ago!
