1.5kg onions, peeled and sliced
soft brown sugar
butter
salt
pepper
cider vinegar
olive oil

1. put some olive oil and a chunk of butter in a large pan and add the onions
2. sweat the onions on a low heat until soft. many recipies say it takes about 10-15 minutes. It doesn't. This took about 50 minutes.
3. Increase the heat to medium and add 30gms soft sugar 30 ml cider vinegar, 15gm salt, pepper to taste (optional is chili, Worcestershire sauce). Taste though to ensure that it is balanced.
4. Continue to cook until the onions go dark. Can take a while. allow about 30-45 minutes. My need a stir.
5. Once it is dark reduce heat and allow it to go sticky but not dry.
6. Put in a jar and allow to cool.

We use it on quiches, with cheese and on burgers and hot dogs.
