Might have. The lights in the kitchen are quite warm so it does look a bit more colourful as the phone’s white balance goes a bit off.
50gm butter melted. Then add 50gm plain flour and whisk for two minutes to allow flour to cook out. Then add a generous amount of fine Dijon mustard ( about 2 heaped desert spoons ) and whisk that in. Then gradually add milk until the mixture becomes silky. Then gradually add about 400gm of mature cheddar cheese ( the one we get has a yellow colour to it) and whisk that in until it has fully melted in to the sauce. Add the cooked macaroni and stir together.
Variations: can add some finely diced onion at the beginning and use English mustard. You want to use a mustard that complements the cheese. Can use cauliflower instead of macaroni of course.
