Lemon and lime curd

200gm sugar
100gm butter
Zest and juice of 2 lemons and 3 limes
4 eggs

In a bowl overs immersing water, add the sugar, butter and lemon/lime juice/zest. Once the butter has melted stir the ingredients together. Lightly whisk the eggs and gradually stir into the bowl. Cook for about 10-15minutes. Allow to cool. Slather on bread and scoff.

Should point out that most recipes will say about 3-4 lemons but they will be quite small. The ones I get are quite big. I used 4 of these the first time and it was a ‘little’ sharper than expected!! 15/10 sort of sharper.
